One thing that I've been wanting to make for literally years is bone broth. It's so great for your gut health, I constantly read about its amazing benefits...and yet, I still don't make it (much to my mother's disappointment)!
That is until I found this recipe. So here it is, off the top of my head...my family loves it, so I make it every 1-2 weeks. It's quick and easy...
1-2 onions fry on low in oil until translucent (about 10mins)
2 carrots grated/2 stocks celery chopped (sauté for a further 10mins on low)
4 - 6 cups of chicken stock (I might add a 1ltr of chicken stock and then 1-2 cups boiling water) and bring to a boil
Add chopped fresh or dry herbs (I use Thyme, Parsley and Rosemary)
Pinch or two of salt
Once at a boil add 4 chicken thighs with bone-in (that's the key to the good stuff) for 20mins
Take out the chicken thighs onto a cutting board. Then if you would like (but don't need to, add in 2 cups dry pasta to cook for 7-10 minutes or turn off the stove if want to just dip in crusty bread)
Shred the chicken with two forks to get all of the meat off the bone. Add back into soup mixture (once the pasta has cooked) or into no-pasta soup stock.
